So at my work, we serve a Reuben sandwich and even though I haven't eaten the ingredients (corned beef, swiss cheese, 1000 island...) for over a month... The sandwich calls out to me. My wonderful experience with sauerkraut on Memorial Day has led me to want this sandwich even more. After researching some recipes online for vegan versions, I am going to attempt to make my own.

It probably won't be too much like the actual sandwich, so I'm going to just make A sandwich instead of a "Reuben" sandwich... All I really want is the sauerkraut anyway....
