Post 3-Day Weekend Vegan Cupcakes

On Tuesday, after Memorial Day, we made some vegan cupcakes. I just got the Arrowhead Mills brand organic "Bake With Me" cupcake mix. Substituted Ener-G Egg Replacer, and vanilla almond milk for eggs and cow's milk. Good to go!

My mom making the icing. Tofutti cream cheese (1 container) and about 1 stick of Earth Balance vegan buttery sticks, with as much powdered sugar as you want.



I didn't have any berries to make the icing a different color, so I just dropped some green food dye in it. Not the best I know, but... I am learning.

A little sprinkle of coconut and voila! I ate THREE of them!! The boys got to take some to their pops house. I hope they enjoy them like I have!
