What a perfect time to start a blog!




Hello everyone!! One of my friends recommended that I start a blog about my journey. It was inspiring as I really do miss writing. There is a lot going on in my life and it would be fun to record it!

A few days ago (though I have been thinking about it for a few years), I decided to slowly be vegan. Most days I feel really crappy and wake up in the middle night with anxiety, cold sweat, dizziness, and nausea. I wake up in the middle of the night so thirsty that I feel like my lips are burning off my face. When that happens, I usually look at what I ate that day, was it good? What were the main ingredients? I have found that on those days, I usually ate too much bread, refined sugar, or high sodium foods. Or had alcohol. To add, my skin breaks out in red patches and I find that this happens more when I eat gluten rich foods such as pizza and pasta.

I come from a family that has high cholesterol, high blood-pressure, diabetes, heart disease, obesity, MSG allergy, among other things. I realize that I have to make a change now. Less sodium filled foods meaning more RAW and home-made ingredients. Less bread and refined sugar to keep my blood sugar at a feel-good level. More gluten-free dishes. This blog will record my journey as I learn about all the food out there that I have never tried, and all the food out there that can help my body/taste buds.

It is a great time to start a blog because it is 2 days away from Mother's Day! I am a mother and most of my battles start right there. My two children spend half their time with me and half their time with their dad. It is difficult dealing with their eating habits this way as they eat one way here, and one way at their dads. They ask for fast food on a daily basis and I know this is a result of their father as he loves fast food. But, we pick our battles and I try the best I can to cook them a nice home-cooked meal. I don't believe in forcing the boys to eat what I eat as it is already a big enough change for me. I will offer what I eat WITH their food, but I won't force it on them.

My oldest son is on high-calorie diet so I have to make him dishes every day that focus on high-fat ingredients such as bacon fat, whipping cream, butter, and the like. My youngest son is my best eater. He loves pretty much anything I make him. A few months ago I made him Kale Chips and he loved it. He loves fried tofu and cucumbers with ranch... He also loves edamame, so many different things. I think he is my favorite person to eat with. But that doesn't mean he doesn't like the bad stuff too! He could eat a whole box of Nilla cookies, or Pringles if you let him... ;)



I have a 9-month old daughter and she is my shining star at the moment. Taking her with me to Whole Foods and showing her all the vegetables and fruits. I love that she is learning about food and eating and I get to be a part of it!




My boyfriend comes from a meat-eating family and like my sons I will not force anything on him but I do try to get him to eat a little healthier, whether that be me making him a salad for lunch with tons of veggies. I love him and he is a huge part of my life. I try to make him happy by cooking him a yummy dish. We do what we
can hey women!?

So here I go!! Happy Mother's Day weekend every one! One of the few days a year I get to sleep in! Haha!
