It's Almost Mother's Day!



Good morning every one! Well, it's not morning anymore but I wanted to talk about my smoothie today. This morning for breakfast I made a smoothie made of coconut, pineapple, banana, almond milk, and agave nectar. I am still learning a lot about coconut so I don't think that I did it right. I used the meat of the coconut and blended it with the other stuff but it was still kind of gritty. It was tasty but I think I need to research it more before just buying coconut meat for a smoothie... Doh.
Anyways, after looking at the benefits of eating coconut did you know that they better your digestive health by feeding the good bacteria and clearing the bad stuff/parasites out? It also helps with diabetes as it regulates blood sugar. I think I will be eating this stuff on a weekly basis! But, like I said, I need to research recipes and what to buy.


The boys are with their dad so it was just Me and Miss Melody today. I got a lot of errands done but was craving some veggie rolls... SO I went to the Loving Hut (Vegan restaurant) and ordered some and man they hit the spot so hard that Miss Melody and I laid down for a nap immediately following. It was like one of those food comas!



Sticking to my theme, I made a veggie stir fry with gluten-free pineapple teriyaki sauce, and gluten-free soy sauce. Though this isn't raw, I was really craving a good stir fry. Veggies included: Red onions, garlic, carrots, eggplant, zucchini, red pepper, asparagus, broccoli, cauliflower, portobello mushrooms and kale. I also threw in some diced pineapple. Speaking of cauliflower I think I am making it my veggie of the month. I read that cauliflower helps detox your body and is an anti-inflammatory. Very excited about eating cauliflower now.



The stir fry came out delicious, and I made a small pot of whole grain rice to have with it. Yummy but a little salty. I might be paying for this later. I can't blame anyone but myself for using those sauces, but this is how we learn right? At least it was gluten-free...

I think I might make a smoothie later as I am craving sweetness! strawberries!! I wish I had soy ice cream but I know it's not a good idea as I am trying to eat as little processed food as possible... maybe at the end of the month.

Miss Melody and I are going to go take a hot bath. I need to enjoy my night off as the boys are coming back tomorrow and then welcome to hotel chaos!!!

On a side note, I think tomorrow I am going to make some portobello burger wraps with kale chips and raw tahini garlic dip.
